Even with our best efforts, bread is always is abundant supply at our projects. The chefs at The Good Plate have come up with some creative ideas for tackling the bread mountain.

Breadcrumb Bites

Ingredients

  • 350g stale bread, sliced
  • large pinch of sea salt
  • 3/4 tsp baking powder
  • 75-80g butter/marg
  • 1/2 cup brown sugar
  • 1 large egg

    Method

    Preheat oven to 350 degrees.
    use a food processor or blender to cut the bread into fine crumbs.
    add salt and baking powder.
    in another bowl, cream butter and sugar
    add egg.
    combine wet and dry till well mixed.
    drop tablespoon sized cookies on to a baking tray and bake 10-12 mins, until the top is golden brown.
    eat on the day of making

 

Chocolate Banana Breadcrumb Cookies

Ingredients

 

  • 350g stale bread, sliced (gluten-free bread works too)
  • 2-3 very ripe bananas
  • 2 tbsp oil
  • 1 egg (for vegan, use a flax egg*)
  • 1/2 cup chocolate chips (or more!)

    Method

    Preheat oven to 350 degrees.
    Use a food processor or blender to cut the bread into fine crumbs.
    In another bowl, mash the bananas till smooth.
    Add bread crumbs and mix with a fork till combined.
    Add egg, chocolate and oil and mix.
    If too dry, add more banana.
    Make into balls and flatten on a baking tray.
    Bake 10-15mins till golden-brown.

    *Flax egg= 1tbsp ground flax and 3 tbsp hot water.mix and let it sit a couple of minutes till gloopy. then use in place of an egg.

Crostinis

Ingredients

 

  • Slightly-stale baguette, sliced thinly (other breads, especially ones with a denser crumb, work too)

    Method

    Preheat oven to 100-150 degrees.(depending on your oven!)
    Place slices of bread on a baking tray and bake about ten minutes till lightly browned and crunchy.
    Cool on a rack.
    Serve with your favourite topping!

Baked French Toast

serves 6

Ingredients

 

  • Loaf of slightly stale bread (any sort)
  • 250ml cream (double or single)
  • 2 eggs
  • jam or marmalade of choice
  • 1/2 tsp ground cinnamon
  • 1 tbsp golden sugar

 

Method

Preheat oven to 180°C.
Slice bread into 12 slices.
Make 6 jam (or marmalade) sandwiches, and place in a large glass baking dish.
In a seperate jug, beat eggs into the cream and pour over the bread, making sure every thing is coated.
In a small bowl, combine sugar and cinnamon. sprinkle over the pan.
Bake 20-30 mins, till the egg is cooked.
Serve.
