Fruity Curry
Ingredients
- 1-2 tbsp oil
- 2-4 cloves of garlic, finely chopped
- 1-2 onions or 6-10 shallots, finely chopped
- about 1 tsp ginger, finely chopped
- 1-2 tsp curry powder (any kind you like)
- 1 tsp water
- about 2 cupful vegetables: green beans, peppers, carrots, sweetcorn, peas, cauliflower, even salad leaves, ready-cooked chickpeas/lentils/beans
- 4-8 bananas
- 1 can coconut milk
- salt, to taste
Method
- Make a paste with the curry powder and water. Set aside.
- Heat the oil in a big saucepan.
- Add garlic, onions/shallots and ginger. Fry till fragrant and onions/shallots are translucent.
- Add curry paste and mix well. Fry till the paste is fragrant and just starting to burn.
- Quickly add vegetables and stir. This will stop the paste from burning.
- Add a few tablespoons of water to the pan. Cover and let the vegetables cook/soften.
- Peel bananas and slice directly into the pan.
- Add coconut milk and stir to mix well. Add water if desired.
- Add salt to taste.
Note: The quantities of each ingredient listed is not exact because you can make up a curry according to what you have on hand, and how you like it! This recipe gives you the basic principals of making a simple curry with very basic ingredients. Steps 1-4 are what you need to start a good South-East Asian-style curry. What vegetables you put in is up to you!
Bread Upma
Ingredients
- 3 tbsp oil
- good pinch of brown mustard seeds
- 1-3 onions, chopped
- 1-2 peppers, chopped
- 2-6 tomatoes, chopped or canned tomatoes
- stale bread, cubed (from 1cm cubes to 1inch cubes)
- salt, optional
- Heat oil in a large saucepan.
- Add mustard seeds. This will burn very quickly so beware!
- Add onions and fry till onions are translucent.
- Add peppers, tomatoes (you may leave either out too) and fry till they are soft.
- Add bread cubes and stir to coat. If you like it dryer, add more bread. If more moist, add less. This is ready to be served.
- If you like this crunchy, spread the Bread Upma onto a baking tray and leave in a hot oven till the top is crunchy.
Serve any curry with the Bread Upma (instead of rice). Delicious!
