Brown bananas can often end up in the bin, so Bec Groom gave us some of her favourite recipes for making the most of this wonderfully versatile fruit.
Banana Pancakes
- 2 overripe bananas
- 2 eggs
- 1 tsp baking powder
- 1 tsp cinnamonMethod
Mix everything together.
Heat a little oil in a frying pan.
Add a big dollop of the mixture to the pan, turn over when they start to bubble and rise.
Once you’ve got a stack, share them out with blueberries and maple syrup!
Banana Breakfast Cookies
- 2 large old bananas
- 1 cup of oatsMethodBlend together (best to machine or hand blend, to get the oats finely chopped up).
At this point you can add extras – choc chips, chopped nuts, cinnamon, raisins or anything you fancy.
Bake for 15 mins at 180°C.
Decadent Double Chocolate Banana Cake
- 3 medium ripe bananas – mashed
- 3/4 cup brown sugar
- 1/2 cup apple sauce
- 1 tsp vanilla essence
- 1 egg beaten
- 1 cup plain flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1 cup choc chips and extra to sprinkle on top
MethodPre-heat oven to 180 C and grease an 8″ tin.
Combine mashed banana and sugar, until sugar dissolves.
Add apple sauce, vanilla and egg.
Stir in four, cocoa powder, baking powder & choc chips.
Pour mixture into prepared tin.
Sprinkle choc chips on top.
Bake for 20-25 minutes.
